Ingredients:
1 pound raw shrimp peeled and cleaned
1/3 cup butter or margarine
1/2 cup chopped onions
1/2 cup chopped green onions
2 teaspoons minced garlic
1 green pepper, cut into strips
1/2 to 3/4 cup chopped celery
1 can tomatoes with juice (1 lb.)
1 cup chicken broth
1/4 teaspoon salt
1/4 teaspoon cayenne (for mild)
1 cup instant rice
Cooking Instructions:
In a large skillet (frying pan) melt butter or margarine and add onions, green onions, garlic, green pepper anc celery. Cook on medium heat until tender. Add shrimp and cook for 5 more minutes. Shrimp will change color. Add tomatoes and juice, chicken broth, salt and cayenne. Cover and cook over low heat for 25 minutes. If mixture becomes dry, add tomato juice.
Additional Comments:
Clean tails off of the shrimp.
