Ingredients: |
1 thin pizza crust - plain - look on hangers near freezer section (e.g. DiGiorno). Or substitute some kind of flat bread from the deli section. |
Low fat pesto Any vegetable -(squash, asparagus, whatever) Part skim, low fat mazarella cheese - bag - shredded What you like - can of black choppped olives, jalapeno slices, chopped onion, shrimp pieces, etc Sliced turkey bacon (or whatever) Bit of garlic powder (optional) |
Cooking
Instructions: |
Put a 3-4 slices of then turkey bacon on a paper towel on a plate and microwave for 3 minutes. Chop up the vegetable and microwave for 2 minutes. Pre-heat oven to 350. Put crust on a big cookie sheet. Spread a bit of the pesto on the crust. Crunch up the turkey bacon and spread on the crust. Spread around the vegetable. Spread olives or jalapeno or onion or whatever. Sprinkle a tiny bit of garlic powder (omit if you get gassy). Sprinkle the cheese on top. Bake for about 10-15 minutes or until cheese starts to brown. Watch out - this happens quick. |

Suggestions: |
Slide that sucker off onto a cutting board. Cut slices and serve. All kids will eat this - vegetables and all. And you have served one hella healthy meal. |
